The restaurant Industry

A friend who is in the restaurant industry recently shared a long article with me that outlined how the restaurant industry needs a bailout from congress, and how every individual consumer should shop directly with their favorite restaurants in order to help them survive.  While I understand the sentiment of both ideas, I have some major questions about why the restaurant industry is not changing quicker and I wanted to jot them down below. Additionally I was wondering if this type of situation is part of a larger move away from capitalism. On the surface I can see where people in the restaurant industry are coming from, over the past 10 – 15 years other industries have received bailouts. Which has had the unintended consequence of rich board members and CEO’s at these large companies realizing that they should operate the company’s close to the edge. Privatize all the gains to the select few in the upper management circle, and spread out all the risk/potential losses to the general public because if they operate their companies close to the edge when a disaster or hardships comes along (like in this case with COVID) then they can go running to the publicly elected officials for financial help. They often receive the help because they frame it as; if you don’t help our company and industry than XXX,XXX jobs will be lost because all the companies will quickly fail due to the poor financial situation they have been put in. The companies have typically been put in this precarious situation with large stock buy back programs and vastly inflated upper management salaries and bonuses. So on the surface I do see where everyone in the service and travel industry is coming from, but we are heading down a very dangerous path of privatizing gains and making losses public, which is not capitalism. And I am a huge fan of capitalism, its not perfect, its not 100% fair but its the best system that we have ever developed to equally reward effort. When the power to define winners and losers is concentrated into a small group of people (in this case of bailouts that small group is members of the congress and senate) it inevitably becomes corrupt and less fair than the system of capitalism. Additionally at some point we will devalue our currency enough to cause a huge disaster, its kind of like an earthquake in the since that we will never know exactly when the tipping point comes and our currency starts the unstoppable slide to ruin but if we keep our current trajectory up it definitely will come in our lifetime.

My friends post got me thinking about how much it would suck to live in a world with only fast food options and no cool restaurants. It seems many, many restaurants are in serious jeopardy or closing down during this pandemic and it seems strange that they are not adapting.  Asking for money from congress now, and or asking customers to order directly from restaurants that do not have a smooth or convenient process in place are not long term solutions.  They both could help stop the bleeding for a short period of time, but beyond that life will move on, in business efficiency will almost always win out over time and it would really suck to end up in a society with only fast food options.  The world is so much more fun when there is a unique and diverse set of food and entertainment options to enjoy.  It would really suck if every cool restaurant I enjoy just stuck their head in the sand and pretended like they could get back to business as usual in the next few months, and as a result closed down. Even beyond that, restaurants opening their doors and calling for people to come in to eat during the middle of a pandemic is irresponsible on their part.  It’s obviously a hard situation for them and I’m sure they are just stuck in the old frame of mind that they had, but asking for people to come in and eat and put themselves and everyone in the restaurant at risk just to eat some food is not good for anyone, and not something that we should encourage people to do.  I wanted to reach out and try to learn from your perspective to see if I can change my mind about this scenario.  I’m wondering if I am missing something because this is an industry and area I’m not familiar with, but from my vantage point I don’t understand why restaurants are not changing with the times faster.  We have tried ordering to-go from many different places and it’s probably about 30% of the time we have a good experience.  Obviously it’s hard for restaurants to pivot what their business does but it was very clear to see for the past 3 – 4 months that in a best case we would have to live with this virus and at least some form of open/lockdown/open/reduced capacity situation for at least the next year, so it’s confusing to me why restaurants have not gone to their landlords and renegotiated rent.  Every commercial landlord is literally facing a crisis of their own with an avalanche of people realizing they can work from home again might not need office space. Restaurants have leverage here. If restaurants can’t renegotiate with the landlord successfully, then its better for them to just default on rent because they are in a total emergency and literally don’t need in room dining capacity at all, for at least the next 6 – 8 months.  And even beyond that it’s very possible that business dinners and quick lunches are going to be greatly reduced moving forward as everyone works remotely.  The ground has moved underneath restaurants feet and it is more than likely never coming back 100% to what it had been.  Restaurants need to adapt now and greatly reduce their physical footprint and get an easy way for customers to order their food online. They need to completely avoid using a 3rd party services like grubhub or uber eats, they just need a great simple to use website or app of their own.  Something like Chipotle, or another more local place I’ve seen do this well is Mission taco.  Ordering from Mission taco is a freaking snap, it works flawlessly.  10 minutes after you order you get a text saying your food is being bagged up and will be ready for pickup in 5 minutes.  They have a smooth food handoff process; it is honestly something that will work moving forward.  With this success its seems like they could take the slight risk of keeping their physical locations open even though that is currently a drag on their finances.  But if they are able to keep their in-room dining and we get a vaccine by next spring/summer and then within 4 months or so enough people take it to get us to herd immunity then they will be in great shape to see if in-room dining rebounds.  But more than likely with the current state of our country, not enough people will even trust the vaccine to take it, and we will stumble along in this state of 4 months open, then hot spots develop and we lock down again, then another 4 or 5 months open and back to lockdown in another area again, so in summary it seems like the restaurant industry needs to change their business model in order to survive for the long term.  Asking congress for handouts, and asking consumers to inconvenience themselves is not a long term solution to this major problem they face.

Wiring Up Outlets On Multiple Circuits

This post will detail wiring up outlets in the following situations:

  • 12 – 3 wire connected to two circuits in the panel running to a single outlet box with 1 leg continuing on to power GFI switches and 1 leg connected to the outlet receptacle
  • 12 – 3 wire to connected to two circuits in the panel with both legs running to a single receptacle

This post contains information I learned while wiring our house, I am not a journeymen electrician so this post should cover many of the pitfalls a novice attempting a wiring project like this will encounter. Let’s get going!

Special Note:

It is a super helpful to install these spacer plates when you install an outlet, they allow for the outlet to stand proud and poke out of the cover plate which looks so much nicer!

12 – 3 to multiple outlets. This is used where you have a home run going into 1 box and you want to keep that box on a different circuit than the rest of the outlets in the vicinity. In our situation this was used to run a dedicated circuit for the fridge, with a separate circuit for 2 GFI outlets above our kitchen counter. Step by step pictures are below:

Connecting the Ground wires. We take all of the ground wires along with a 6 inch pigtail wire and wire nut them together.

Connect the Neutrals together with a 6 inch pigtail just like the grounds.
Connect The Red Power wire from the 12 – 3 wire that runs from the panel to the lower right nut of the outlet. Connect the pigtail ground wire to the green ground screw on the outlet.
Connect the black power from the 12-3 wire to the black wire of the 12-2 outlets which will go on to power the GFI outlets on a separate circuit downstream. Connect the neutral pigtail to the left nut on the outlet and you are all set. Push the wires up and then back into the box and screw the outlet to the box

12 – 3 to a single outlet. This is used where you want the top and bottom of a single outlet to be on separate circuits. In our situation this was used for a garbage disposal and a washing machine. Each appliance draws more than 10 amps so having them on a single 20 amp breaker would cause an issue if both appliances were being operated at the same time. Step by step pictures are below:

Break the tab that connects the two nuts on the side of the outlet. Normally these are connected and allows for the power to only be attached to one of the screws and have both outlets work. In this situation however we want 2 separate circuits so we rip off the connecting tab
Connect the black power from the 12-3 wire that runs from the panel to the lower right nut. Connect the red power from the 12-3 wire to the top wire nut.
Connect the neutral and ground wires to their screws then push the wires up and fold back into the box and screw on the outlet.

Indoor Container Farming Series: Post #1

This is the first post in a series pertaining to starting and maintaining an Indoor Container Farm. The goals for our farm, at least as far out into the future as we can see them, are to:

  • Try to replace a large % of our fresh fruit and vegetables with locally grown (by us) options.
  • Track:
    • How much this reduces our food bills *will need to come up with a cost per lb on all local grown food, including fixed costs and labor costs
    • Taste differences between store bought and our home grown options
    • All Cost – including materials and water/electric cost
    • Hours it takes to start the farm and then ongoing maintenance for 2 – 3 years so total time commitment (initial and recurring) can be estimated
  • If the initial list of plants below turns out to be fun then we will move on to the Restaurant Plants List to see if we can convert the garden into a profitable money maker that would allow a potential basement gardener to earn income from a hobby
  • If this idea turns out to be more affordable & better tasting then outline how someone could get started and try to promote the idea. If a large % of the US was able to grow their own produce locally it greatly removes the need to ship produce all of the world, cutting down on carbon emissions and allowing for a more sustainable food model that is not controlled by only a handful of very large corporations.

A Promise From My Wife

I had a great conversation today with my wife. We were laying down to go to sleep after she finished a bit of a rough day. Many people in her family have dealt with depression issues and she was also reacting after her family had some very negative news about a close family friend being diagnosed with brain cancer and only have a short time to live.

Our conversation went as follows and I’m writing it down because it was very meaningful, so hopefully it could potentially positively impact anyone else who is reading this. Plus my wife made a promise to me, so I want to document this promise in written word.

ME: Lets find a cheat code to you being happy, are their any little things that you can do throughout a day that you know make you happy? And if not “happy” then at least little things that can by themselves start to turn a day around? I’ve written bout this before in my Simple Joys post. She decided to think over the next day and to write down any ideas that came to her head.

At the end of the day she didn’t really have any ideas written down so we sat down and talked it through, and luckily we were able to think of one together! To respect her privacy I wont share the idea, but it was very meaningful to her and something that she decided would turn any potential bad day around; and instantly give her a happy thought that she could focus on for the rest of the day. It was perfect, and I got so happy for her that she now had this little cheat code she could access anytime she felt like it! Anyway back to our conversation:

I asked her to promise me, out loud that she would try to use this cheat code anytime she was down. In addition to that, I asked that she promise me that she would figure out a way to find the positive side of things life throws at her, or at least some type of positive take away. ** If it was some kind of adversity she could use that as motivation to work harder, or if it was in fact actual good news she would bask in that good news and celebrate it without thinking beyond the current good news and focusing on any aspect of the situation that could go wrong in the future. A big part of her ability to make me this promise was that there is no timetable on when she will achieve this ability to see aspects of everything positively. But she did more than just commit to “trying” to do it. She acknowledged that she is in control of her thoughts and emotions, she will achieve her goal some day, but there is no rush. Everyone works at different speeds and in different ways. Its important to note there is a fine line between admitting there are circumstances beyond our control, and committing to the idea that we react to every situation in our own heads, we control the narrative and the impact any situation has on our own lives. Even in the case of loosing a loved one, we can choose to focus on all of the positive memories that we had with that person, and the positive affects they had on our life, which have stayed with us long beyond the absence of their physical presence.

And on the lighter side, I also got my wife to admit that there really is no point in wasting her energy on being down or sad/upset for too long because I will always be there with my relentless positivity to force happyness and fun on both of us because I am her husband & I am a happy person. ** I will drag her into happiness if/when I ever have to 🙂 It is way more fun to be happy, and to spend mental energy focusing on what could go right instead of what could go wrong. Most things in life have way better odds than 50-50 of going well or at least being somewhat close to how we want them too. And hell even at 50-50 you still have a coin flip of things going well, you can just as easily spend the vast majority of your time focused on the good/fun parts, and then in the off chance that a negative situation does roll your way just pause, soak up the feeling, ask yourself if this negative result was because of a past decision you made. If it was, identify how you could choose better in the future if this situation or anything similar comes your way. If it wasn’t something in your control, accept that life has a certain level of unpredictability. At the end of the day sometimes the chips don’t fall the way you want them to, and things beyond our control are the cause. In those very rare cases the only thing you can do is tip your cap to the universe, and then wake up the next day and be thankful you are still hear to enjoy another day 🙂

**Everything within reason, a loved one being diagnosed with a fatal illness does not qualify, we can all be down about that for a period of time.

**I declare that in public to my friends as a defacto social contract and a sudo self filling proficiency. Everyone expects me to be happy anywhere I go, I usually am by default happy every day and everywhere I go so in the rare case that I’m not and I have a social occasion to attend my mind almost goes on auto pilot and switches gears to being happy since that is my routine, that is what I, and everyone else expect :).
